which class would be the most helpful in making my application stronger?

I am planning on transferring to a different school next year and I heard that for sophomore transfer, I heard that course selection is the pretty important part so I want to make the best decision I can. I am an engineering major but I have the great interest in humanities, social science, and Arts also. Upper div. Poli sci vs Upper div. Literature Class vs Lower div Theater class Those are what I can take next spring. I took lower div literature class and I think I will very likely to get an A. Same professor teaches upper div class and going to ask him for the LOR. However, I also take writing class next semester so I am not sure it is a good idea to take two classes that involve lots of writing at the same time. Poli sci class has fairly high-class average so I don't think it would be too much work. I heard that there is no writing assignment except the exams. I took AP US gov't in HS. I did pretty well but I was very sick on the exam day so couldn't do my best on the exam. I passed it tho. Lower div theater class is easy A class. Also, I did lots of theater work in high school, but I just cannot join any theater related extra curricular at college due to the time issues. It might be good to show the colleges that I still have passion for it...?! I feel like taking upper div literature class could be the best because it might help covering my low SAT reading score (620) if I get a good grade from this class. But I am not sure which would be the best option for me.
